Big Mac Cocktail Worcestershire Ice -Blend burger patties (sounds gross, but just for flavor). -Add Worcestershire sauce and water -Freeze in cubed mold. Lettuce/Onion Ice -Juice Big Mac Lettuce/Onions. (add lettuce/onions if needed) -Boil 15 celery stalks. Blanche (to stop discoloration). Juice and strain through Cheesecloth. -Add juiced lettuce/onion mix -Add sugar and kosher salt -Use Syringe and inject into sphere ice molds. -Freeze Fresno Ice -Take 5 Fresno Chilis (remove seeds and stem) and blend. -Squeeze through Cheesecloth yielding juice. Dilute with water. -Pour into metal tin and freeze. Pickle Brine -Fill jar with sliced cucumbers and big mac pickles. -Boil Brine: Vinegar, Water, Sugar, Salt -Add to cucumber/pickle mix and set in refrigerator to cool. Big Mac Bun Croutons -Break the bun into crouton shape -Toss with olive oil, salt, rosemary, garlic powder -Bake in toaster oven with Big Mac Cheese until golden and crispy Tomato Base -Cut 1kg of Heirloom Tomatoes in half and put on baking sheet. -Roast in 500 degree oven for 30 minutes. -Add in blender: 700g of cooked tomatoes, 70g of sugar, 14g of kosher salt, 40g of red wine vinegar, 20g lemon juice, 22g of grated horseradish, 1tbsp big mac sauce, 20g pickle brine, 200g of Vodka (finally, booze) -Blend and strain into a cup -Store in refrigerator/Shake with ice and set in Carafe Assemble Cocktail -Layer in “Ice”: A few Fresno ice, 10 lettuce/onion ice balls, 1 Worcestershire ice cube, 2 more Fresno ice, 10 more lettuce ice balls. -180g of tomato base (served in a carafe) -Garnish with bun croutons and celery Bloopers!
